Based in Shonan city in Shiga, this brewery which was founded in 1805 specialises in making Sake using the Kimoto method. This method is a traditional way of making sake by allowing lactic acid to be produced naturally without any lactic acid being added in the brewery. This gives the sakes a richer and more profoundly rustic taste and it is these sakes that are used as the base for the fruit liquors. The shio range uses salt water from the Ito peninsula as the water to make the sake and this gives the fruit liquors their naturally salty aroma.
