Japanese Ginjyo sake known for its refreshing and dry taste palette is mixed with ripened and fruity ‘Nanko’ Ume plum.
This blended with black cane sugar with its heavier texture, still to keep maintaining its dryness and refreshing after-taste is somewhat challenging for any brewers.
The end result is surprisingly light and sour, dry plum wine. The thickness within comes from the cloudy liqueur with the textured plum pulp.
Kankoubai brewery established in the mid-1800 is based in Mie prefecture, where Ise Jingu shrine known as the ‘soul of Japan’ is based upon. This family-owned brewery keeps challenging the exploration of new tastes - this plum wine is definitely one for the connoisseurs.
